Apple Cake
Ingredients
- 2 cups (500 ml) of peeled diced apple
- 1 egg
- 1/2 c. (125 ml) white granulated sugar
- 1/2 c. (125 ml) brown sugar
- 1 tsp. (5 ml) cinnamon
- 1/4 c. (50 ml) vegetable oil
- 1 c. (250 ml) chopped nuts (walnuts or pecans)
- 1 c. (250 ml) all purpose flour
- 1 tsp. (5 ml) baking soda
- 1/4 tsp. (1 ml) salt
- 1/2 c. (125 ml) raisins or chopped dates
Instructions
- Preheat oven to 350 F. (180C) Grease and flour a 8 inch round cake pan.
- In a large mixing bowl combine the apples and egg.
- Stir in the sugars cinnamon and oil.
- Stir in the nuts.
- Stir in the flour baking soda and salt.
- Add the raisins and stir.
- Spoon into the prepared pan and bake for 40 to 50 minutes. The cake will be puffed and golden.
