Apple Cake

Ingredients

  • 2 cups (500 ml) of peeled diced apple
  • 1 egg
  • 1/2 c. (125 ml) white granulated sugar
  • 1/2 c. (125 ml) brown sugar
  • 1 tsp. (5 ml) cinnamon
  • 1/4 c. (50 ml) vegetable oil
  • 1 c. (250 ml) chopped nuts (walnuts or pecans)
  • 1 c. (250 ml) all purpose flour
  • 1 tsp. (5 ml) baking soda
  • 1/4 tsp. (1 ml) salt
  • 1/2 c. (125 ml) raisins or chopped dates

Instructions

  1. Preheat oven to 350 F. (180C) Grease and flour a 8 inch round cake pan.
  2. In a large mixing bowl combine the apples and egg.
  3. Stir in the sugars cinnamon and oil.
  4. Stir in the nuts.
  5. Stir in the flour baking soda and salt.
  6. Add the raisins and stir.
  7. Spoon into the prepared pan and bake for 40 to 50 minutes. The cake will be puffed and golden.
