Apple Coconut Dessert Squares
Ingredients #1
- 1 cup all purpose flour
- 1/4 cup firmly packed brown sugar
- 1/3 cup butter
Ingredients #2
- 1/4 cup all purpose flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 2 eggs
- 1/4 cup firmly packed brown sugar
- 1 tsp vanilla
- 2 cups finely chopped apples
- 1 1/3 cups coconut
- 1/2 cup finely chopped pecans
Directions
- Combine first two ingredients. Cut in butter until mixture resembles coarse crumbs. Press firmly into bottom of ungreased 9x9" pan. Bake at 350 degrees for 20 minutes or until lightly browned.
- Sift together flour, baking powder, salt and cinnamon. Beat eggs. Gradually add sugar and continue beating at medium speed of electric mixer until mixture is thick and light colored. Blend in vanilla and flour mixture. Stir in apples, coconut and pecans. Bake at 350 degrees until lightly browned. Cut into squares while warm. Serve warm with ice cream or cool whip.
