Apple Raisin Cinnamon Buns
TOPPING
- 1/2 cup brown sugar
- 1/4 cup unsalted butter
- 2 tbsps. corn syrup
- 1/4 cup chopped pecans
FILLING
- 1/4 cup chopped pecans
- 1/4 cup raisins
- 2 apples peeled and cut into 1/4 in. cubes - about 1-1/2 cups
- 1 tsp. cinnamon
DOUGH
- 1-3/4 cups all-purpose flour
- 4 tsps. baking powder
- 1/4 tsp. salt
- 1/3 cup cold unsalted butter cubed
- 2/3 cup milk
- 2 tbsps. unsalted butter melted
TOPPING:
In medium saucepan bring sugar butter and corn syrup to boil over medium heat stirring frequently until sugar is melted. Stir in pecans.
Turn into lightly buttered 8 in. square cake pan. Set aside.
FILLING:
In medium bowl combine pecans raisins apples and cinnamon. Set aside.
DOUGH:
In large bowl combine flour ,baking powder, and salt stirring with fork to mix well. Using pastry cutter or two knives, cut in butter until mixture resembles coarse crumbs. Gradually stir in milk to make soft dough. Gather into ball.
Turn out onto lightly floured surface and knead about 10 times. Roll out into a 11 by 9 in. rectangle. Brush with half the melted butter.
Sprinkle with filling pressing lightly into dough and leaving a 1/2 in. border along farthest long edge. Starting at closest long edge tightly roll up jelly-roll fashion pinching seam to seal. Slice into nine pieces.
Snugly arrange cut sides up on sugar mixture in pan. Brush tops with remaining melted butter.
