Apple Salad

  • Wash 2 red crunchy apples do not peel chop into pieces about 1/2 by 1/2 inch.
  • Wash and chop 3 stalks of celery
  • Wash seed and chop 1 green pepper (you can use half green half yellow for contrast)
  • Chop 6 fresh mint leaves add 1/4 c walnuts (optional)
  • Add all ingredients to serving bowl.
  • Mix together
  • 1/4 c white vinegar (balsamic is better tasting but does not look as appealing.
  • 1/2 c olive oil or light vegetable oil
  • 1/4 tsp Coleman's mustard
  • dash of Worstishire sauce
  • Sprinkle 1 teaspoon of sugar on vegetables.
  • Toss then add dressing and toss.
  • This will meld flavours in the fridge for 2 days.
