Dutch Apple Cake

Ingredients

  • 2 CUPS ALL PURPOSE FLOUR
  • 1 CUP SUGAR OR SWEETNER
  • 3 TEASP. BAKING POWDER
  • 2 EGGS
  • 3/4 TEASP. SALT
  • 1 1/2 TEASP. VANILLA
  • 1/2 CUP SHORTENING
  • 3/4 CUP MILK

Topping

  • 3-4 MEDIUM APPLES
  • 1 TEASP. CINNAMON
  • 1/4 CUP SUGAR OR SWEETNER

Directions

  1. Mix together flour, baking powder, & salt. Cream shortening & gradually add sugar. Add eggs & vanilla and beat until light & fluffy. Stir in dry ingredients alternating with milk. Pour into a well greased pan of your chose & flour very lightly. Get rid of excess flour. Peel & core apples & cut into small wedges. Place in rows on top of batter with sharp edges pressed in slightly. Sprinkle sugar & cinnamon mixture on top of the apples the amount you wish to have. Bake in a 350 degree oven for about 50-60 min. or until tooth pick comes clean. Serve warm with a Lemon Sauce. 1/2 cup sugar or sweetener
  2. 1 tablespoon cornstarch, few grains of salt, 1/2 teasp. lemon rind, 1cup boiling water, 2 tablespoons butter, 1 1/2 tablespoons lemon juice. Combine sugar, cornstarch, salt and lemon rind. Add boiling water gradually stirring constantly. Cook & stir over low heat until; clear & thick. (about 5 min.) Remove from heat and stir in butter & lemon juice.
