Dutch Apple Cake
Ingredients
- 2 CUPS ALL PURPOSE FLOUR
- 1 CUP SUGAR OR SWEETNER
- 3 TEASP. BAKING POWDER
- 2 EGGS
- 3/4 TEASP. SALT
- 1 1/2 TEASP. VANILLA
- 1/2 CUP SHORTENING
- 3/4 CUP MILK
Topping
- 3-4 MEDIUM APPLES
- 1 TEASP. CINNAMON
- 1/4 CUP SUGAR OR SWEETNER
Directions
- Mix together flour, baking powder, & salt. Cream shortening & gradually add sugar. Add eggs & vanilla and beat until light & fluffy. Stir in dry ingredients alternating with milk. Pour into a well greased pan of your chose & flour very lightly. Get rid of excess flour. Peel & core apples & cut into small wedges. Place in rows on top of batter with sharp edges pressed in slightly. Sprinkle sugar & cinnamon mixture on top of the apples the amount you wish to have. Bake in a 350 degree oven for about 50-60 min. or until tooth pick comes clean. Serve warm with a Lemon Sauce. 1/2 cup sugar or sweetener
- 1 tablespoon cornstarch, few grains of salt, 1/2 teasp. lemon rind, 1cup boiling water, 2 tablespoons butter, 1 1/2 tablespoons lemon juice. Combine sugar, cornstarch, salt and lemon rind. Add boiling water gradually stirring constantly. Cook & stir over low heat until; clear & thick. (about 5 min.) Remove from heat and stir in butter & lemon juice.
