Mom's Healthy Apple Cookies

Ingredients

  • 1/2 cup hard margarine (at room temperature)
  • 2 tsp baking powder
  • 1 1/3 cups brown sugar
  • 1/2 tsp cinnamon
  • 2 eggs
  • 3/4 cup raisins
  • 1 1/4 cup all purpose flour
  • 1/2 cup whole wheat flour
  • 1/2 cup walnut pieces
  • 1/2 cup pecan pieces
  • 1/2 cup rolled oats
  • 1 2/3 cups peeled chopped B.C. apples (chopped to about the size of half a sugar cube)

Directions

  1. Pre-heat oven to 350F.
  2. In a bowl toss raisins, walnuts & pecans with 1 tbsp all purpose flour. This will prevent the raisins and nuts from sinking to the bottom of the batter). Set aside.
  3. In a large mixing bowl, cream margarine, sugar & eggs together until light & fluffy. Mix in all-purpose flour, whole wheat flour, cinnamon & rolled oats. Mix well. Add raisin & nuts mixture & chopped apples.
  4. Mix lightly.
  5. Drop teaspoonfuls of cookie mixture onto greased cookie sheets. Do not flatten. (These cookies will 'spread' very little while baking).
  6. Bake on center rack 12-15 minutes. They should be springy to the touch & lightly browned on the bottoms.
