Mom's Healthy Apple Cookies
Ingredients
- 1/2 cup hard margarine (at room temperature)
- 2 tsp baking powder
- 1 1/3 cups brown sugar
- 1/2 tsp cinnamon
- 2 eggs
- 3/4 cup raisins
- 1 1/4 cup all purpose flour
- 1/2 cup whole wheat flour
- 1/2 cup walnut pieces
- 1/2 cup pecan pieces
- 1/2 cup rolled oats
- 1 2/3 cups peeled chopped B.C. apples (chopped to about the size of half a sugar cube)
Directions
- Pre-heat oven to 350F.
- In a bowl toss raisins, walnuts & pecans with 1 tbsp all purpose flour. This will prevent the raisins and nuts from sinking to the bottom of the batter). Set aside.
- In a large mixing bowl, cream margarine, sugar & eggs together until light & fluffy. Mix in all-purpose flour, whole wheat flour, cinnamon & rolled oats. Mix well. Add raisin & nuts mixture & chopped apples.
- Mix lightly.
- Drop teaspoonfuls of cookie mixture onto greased cookie sheets. Do not flatten. (These cookies will 'spread' very little while baking).
- Bake on center rack 12-15 minutes. They should be springy to the touch & lightly browned on the bottoms.
